World’s Greatest Macaroni Salad

Of the many things I cook and bake this recipe is the one I am asked to share the most.  It is so simple and flavorful it could easily become a favorite of yours also!  Best part, is that it is best when made the day before!

This macaroni salad is so special we even make it for Christmas dinner…it’s that good!

Chicken Enchilada Soup

  The crisp cool air finds eager bellies gathered around the table warming up to steaming bowls of soup. Somehow the changing of season elicits a longing to linger around the table and I find a hearty soup fits in keeping the mood.

I love that this soup takes no time to put together. It truly is a fix it and forget it meal.  Best part is that it is equally loved by my whole family!

Back to School Pancake Muffins

Day three….we got this. We made it mid week and we are prepared!  This one is the most simple and versatile yet.  Pancake muffins!  You can add anything to these and they will be phenomenal!  Just remember, if you want to add some breakfast meat to it…just cook it up first. 

Do yourself a favor and whip up a batch of these on the weekend stick them in your freezer and sit back and actually enjoy that hot cup of happiness Monday morning because you’re prepared!

Back to School Baked Oatmeal Muffins

Breakfast…here we go, Day two!  Sometimes, despite our best intentions, breakfast does happen in the back of the mini van.  When that happens, I am so grateful for these babies in my freezer.  They are yummy and minimally messy, amen!

This recipe makes about two dozen, whips up in a hot minute, and best of all you can personalize each of them to suit everyone in the family all at the same time…that is something to be excited about it!

Back to School Simple Slow Cooker Ham and Scalloped Potatoes

We made it to day three of back to school slow cooker recipes. This one is the bomb-diggity  (Insert eye roll from the tween as she watches me type bomb-diggity).  My kids eat this up, their friends eat it up, my hubby crosses his fingers in hopes there will be leftovers for his midnight snack.  It’s a sweet moment for me 🙂

Creamy Southwest Chicken Soup

I just love those mindless, economical, quick throw together dinners.  We had a (healthy…I sometimes get called out for the unhealthy recipes….balance, my friends, balance.) baked whole chicken for dinner last night and I used the carcass to whip up a yummy homemade broth for tonight’s dinner. You can definitely use store bought broth and it is just as good.  So if you are interested in not spending a large portion of your evening preparing dinner tonight keep reading for the printable recipe.

Dump all the ingredients in to the crock pot, give it a quick stir, and forget-about-it!

Soup, glorious, soup! This cooked low and slow in my slow cooker for about 7 hours. Add a little garnish and VOILA! Simple, hearty, family favorite!

Fix it and Forget it Pork Chop Bake

It’s true…making homemade scalloped potatoes is not scary-in fact it is almost fool proof (trust me). This recipe was born out of my love for the potatoes but not of the strange looking dehydrated like potatoes you can buy in the box. This is a fix it a forget it meal. So versatile and you can easily add in extra ingredients and flavors to fit your likes. I will share the basic recipe and from there have fun making it your own!

Ingredients needed to get started.
First step add1-2 bouillon cube (s) to 1 3/4 C water and bring to a boil and remove from heat.
You want the bouillon cube to dissolve. Or go ahead and use equivalent already prepared stock (14 oz.)
In a large skillet  heat 1-2 Tbsp olive oil over med-high heat.
Season your chops with salt and pepper.
Add pork chops to pan and brown both sides-3-4 minutes per side.
While chops are frying prep your potatoes.
Nice and golden on both sides.
Add your sliced onions to the same pan. Let the onions cook in the drippings
Remove onions from pan.
Melt 2 Tbsp butter in hot pan.
Add the flour and whisk to make a roux.
Add in the chicken broth and cream of chicken soup( and optional cheese.and any other veggie add ins).Add the onions back in and turn heat to low.
Butter a 13×9 (or whatever works for you) casserole dish. And arrange
potatoes in an overlapping stacking pattern (yes, it is OK to arrange the potatoes in 2 layers-
it will still cook evenly and thoroughly).
Pour sauce over potatoes-no need to mix.
Lay pork chops on top of potatoes. No need to press them down.
Cover with foil and bake in a 350 oven for 65-75 minutes or for extra tender chops bake in
a 300 degree oven for 2-2 1/2 hours.
Ta-Da! Remove foil and let sit for 10 minutes to give the sauce a chance to thicken.

See-easy 🙂  You can also make this ahead of time and stick it in your fridge until you are ready to cook. Just remove from fridge 30 minutes before baking to allow the pork chop bake to come to room temperature (ensures even cooking time and keeps meat from being tough).
Try adding sauteed mushrooms, different cream soups such as cream of mushroom or cream of celery, or our favorite green beans. Season with your favorite herbs and spices to give it even more flavor.  Try adding some grated cheese to the sauce-makes the dish even more decadent! This is also an easy meal to put together to bring to a sick friend or a family with a new baby.
