Bestest Cream Cheese Frosting in the World

Prep Time: 5 minutes

Cook Time: 5 minutes

Keywords: dessert

Ingredients (2 Cups of frosing)

  • 8 ounces cream cheese, room temperature
  • 1/2 Cup butter, room temperature
  • 4 heaping Cups powdered sugar
  • 2 tsp. pure vanilla extract

Instructions

Cream together the cream cheese and butter on medium speed.

Reduce speed to medium-low and gradually add in the powdered sugar until combined.

Add the pure vanilla extract.

Increase the speed to medium-high (setting 8 on my stand mixer) and beat until light and fluffy, about 5 minutes.

Simply delicious!

Makes enough frosting for 24 cupcakes or a two layer cake.

Never Forgotten-September 11, 2001

We all have our stories. Stories, that with time, our children will ask about.  Where we were, who we were with, and how we heard about it.  Stories that regardless of how much time passes will remain freshly etched in our minds and freshly felt in our hearts.

We all saw the horrific images and stayed glued to our TV’s for days.  We remember how eerily quiet the skies were and how we let our differences go to become united as a country.  In one day we saw the very worst and the very best of humanity.  We saw what one human being was willing to give up to save another human being, we saw heroism and bravery on a scale we might never actually get to witness again, and we were brought together as a country, even for just a moment, like we may never experience again.
For the brave men and women on the flights, for the first responders, for our firemen, police officers, for those who stayed back to make sure everyone got out, for those who left last, for those who went back in, for those who never came out, for the doctors, nurses, medical professionals, good Samaritans, clergymen, our brave soldiers, and all those who shed tears for the loved ones they lost-WE WILL NEVER FORGET!

God Bless the USA!!

I grieve so deeply for you and your children. I pray you have the strength you need to get through these very hard days and months to come. It’s a terrible weight you and your children have to bear and to do it under the magnifying glass of the  judging world is incomprehensible.

I pray you run to Jesus and He showers you with His tender mercy and you feel His loving presence so profoundly.
  As you grieve for a life that was built on great expectation, I pray you remember that this is not your fault and there is nothing you could have done to save him from his undoing.
You will feel inadequate, unattractive, confused, angry, foolish, and an array of other ways you couldn’t fathom unless you walk through this mine field.  But precious one,  you are enough, because you are who God says you are…nothing more nothing less.
This will undoubtedly be a season where you will feel alone in your despair, abandoned in a jungle of humiliation, all the while trying to discern sincerity from sin. This is a journey of time, even though time doesn’t really heal all wounds, it does help draw you closer to One that does.
This is not your sin even though the burden of it lies heavily on your heart.  Don’t hide away in shame and grief and don’t let bitterness own you.  In due time, when the world sees you again, let them see that your pain birthed strength, grace, perseverance, beauty, compassion and character….let them see Jesus…the Jesus you always intended for the world to see. Leave the shame and burden at the foot of the cross.
When the hot healing tears dry, lift your head high and remember who you belong to…..you will be OK and Joy will find you again!
My heart just aches for the magnitude of sin that is penetrating our culture under the guise of love, fun, opportunity and happiness.  The enemy knows how to romance us. He sees where our armor is weak (even if we don’t) and offers us snippets of our weakness and presents it to us in a pretty box labeled “curiosity”.  When we open that box the invisible seed of destruction is planted.  Then, he has you- and what was once romance is now burden and bondage.
This destroys seemingly good, faithful people and turns them into hypocrites, cheaters and liars.
Sin holds you in bondage and you will become a slave to it!
Friends, our sins are always seen (Jeremiah 16:17)  and when we chose to continue to water our seed of destruction our secret sins will eventually be brought to light (1 Corinthians 4:5) and when they do are you prepared for the consequences?
The world is out to destroy you but Jesus came to save you.  Real freedom and joy is found in Christ and Christ alone.
I leave you with Galatians 5:1, “It is for freedom that Christ has set us free. Stand firm, then, and do not let yourselves be burdened again by a yoke of slavery.”

Lawful and Sinful

We have come to a place where we automatically assume because something is lawful it must also be moral.  Morality has changed a great deal just even in my lifetime. We, for some reason, think that if we wrap sin in pretty paper with a shiny bow and throw a party for it, it somehow changes how humanity and God sees it.  Because one is acting within law they automatically assume they are “a good person”(which is subjective without the moral parameters given to us by God). There has been a drastic culture change and it just isn’t within the secular world but also within the lives of believers. We are challenging people to redefine what God already defined.  Many Pastors and churches are riding the worldly train looking to attract new members by going against the very word of God-perverting the Bible in ways to make sin irrelevant to ones salvation. We have caved under pressure and are afraid of defending the word of God because we covet the love of man more than the Son of Man.

We have to learn to separate the sin from the sinner.  We can love and support people without celebrating their sin. James 5:19-20 says-  My dear brothers and sisters, if someone among you wanders away from the truth and is brought back,  you can be sure that whoever brings the sinner back will save that person from death and bring about the forgiveness of many sins.

Of course I understand not everyone is a believer but we as Christians need to live a life that reflects God’s will toward them. For example in Colossians 4:5-6 it says-“Be wise in the way you act toward outsiders; make the most of every opportunity. Let your conversation be always full of grace, seasoned with salt, so that you may know how to answer everyone”.  When we are asked, we need to be ready with an answer and do it in such a way that conveys truth, gentleness, and respect.

Titus 2:1 says-“You must teach what is in accord to sound doctrine”. It doesn’t end there.  There are many other verses dealing with false doctrine.

When we sugar coat, add, or purposely misinterpret for gain… Titus 1:11 says it well-“They must be silenced, because they are disrupting whole households by teaching things they ought not to teach–and that for the sake of dishonest gain.

I know the new popular slogan is “I want to be on the right side of history”.  While that might bring worldly pleasure, I would much rather be on “the right side of eternity”.

Love everyone fiercely, be the first to offer encouragement, always speak the truth in love, but don’t forget to be set apart.  Let’s be bold for Jesus!

The Twilight of Childhood

4 Jun Twilight of Childhood

She wakes with an infectious smile that seems to chase away any lingering gloominess from my soul.  She rests her head with ease  in that little crook of my shoulder that always seems to fit no matter how she grows.  She reminds me what goodness, and loveliness, and kindness feels like and she freely shares it with anyone fortunate enough to cross her path.  She dreams of filling shelves at the book store with her writings and filling the stage with songs about her greatest love….Jesus.

Even though the twilight of her childhood is setting in she still clings to girlhood fiercely. She isn’t quite ready to let it go and I’m not quite ready to let her go. So for a moment I will relish in my little girl and all her little girl ways and I will keep loving her well. For these last few moments, I will be near, holding her hand as she dips her toes into adolescence, so when the sun sets for the last time on her childhood she will be ready to let go of me and pursue her own life with confidence. grace, tenderness, and passion. I pray that these gifts will be accepted well and would bring healing to a wounded world and hope to wounded souls.

But for now, I will enjoy her sleepy head on my shoulder with messy curls tickling my cheek. In a moment it will be over. Tonight she will say goodbye to ten and welcome eleven with great expectation…..just as she should.

Take a Moment to Remember

I live with a constant reminder of how blessed I am to of been born and raised in a free country. It is an awesome responsibility to live in such a way that it is never in vain. I am so grateful for the brave men and women who headed the call and left what was familiar and comfortable for a life of upheaval and uncertainty. Today I pause with reflective prayer to honor those who gave their all…the fallen brave who courageously breathed their last breath defending the country and the people they so loved.

To the families who gather around a grave rather than a grill-my prayer is that our Heavenly Father will fill them with grace, peace, and healing. That they would find comfort in each other and that the sweet memories of their loved ones will sustain them until they are reunited in Heaven. Thank you, for your great sacrifice also!

Regardless of your feelings of the military, president, or war we are one family bonded by the American Flag and we should support our soldiers and let them know we appreciate them. A simple “Thank you for your service”, will really show that you stand united with them. Continue to pray for them, for their safety, for our safety, and for their families.

Pray for our wounded country. Pray that the Lord Jesus Christ will help us to turn our faces to Him once again and that He will Bless and unite us.

Thank you to our fallen, to our veterans, and to those serving……..it’s not in vain!

Taco Soup

The lazy days of summer are just about over. Soon enough the weather will change, the trees will showcase their brilliant colors, and the days will become a little more hectic.  One of my favorite ways to warm-up and to solve the mad dinner rush is to dig out my slow-cooker and make soup.  One of our family favorites is Taco Soup.  Easy, economical, and so yummy! Throw this on in the morning and dinner is done!  I want to hear from you! Do you have a favorite family recipe or maybe an easy and quick go to meal?  I would love to see it. What you will need to get started (scroll down for full recipe).
Fry up your ground beef, onion, and garlic until cooked through.
Here, Broukie demonstrates proper ground beef crumbling.
Alison finishes up.
Add the cooked ground beef to your slow-cooker.
The next step is easy-add everything else and give it a good stir.
I needed someone with a little muscle for this step;)
Voila! Turn it on low, cover, and go about your day.
Don’t want to crock pot it? You can add all the ingredients to a
stock pot and simmer for 15-20 minutes and serve.
This is how it looks, mama style. Sharp cheddar cheese,
sour cream, green onion, and Frito’s. What will you add to yours?
If you’re so inclined, enjoy it with a nice glass of chocolate milk!

Taco Soup
-1 1/2 pounds lean ground beef
-1 large onion, diced
-1 clove of garlic, finely minced
-1 12oz bottle of green taco sauce
-1 can beef or chicken broth (14-16 oz)
-2 (15oz) cans black beans, drained and rinsed (optional-if you don’t mind the off color)
-15 1/4 oz can of corn, drained
-4 1/2oz can of chopped green chilies
-15oz can of tomato sauce
-1oz packet of taco seasoning
-3-4 Cups of water
-your favorite garnishes

 In a large skillet over medium heat cook the ground beef, diced onion, and minced garlic until the ground beef is no longer pink.  Add the beef mixture to your slow-cooker and add the rest of the ingredients, stir. Cover and cook on low until ready to serve.  Simmer 15-20 minutes for stove top method.
   Add a salad some corn bread muffins for an even heartier meal.  This recipe feeds my family of 5 with leftovers for lunch the next day. I hope you enjoy it as much as we do.  Thanks for visiting!

BBQ Chicken Quesadillas

Here in the Midwest we get a short season to grill, therefore we do it a lot in the summer. With all that grilling comes leftovers. Honestly, my family isn’t all that excited to eat the leftovers and I am not all excited to waste food. So that leaves me some creativity to turn yesterdays leftovers into something my family will enjoy. Let’s get started!

Here are last nights BBQ chicken breasts. I took them straight from the fridge
and removed the meat from the bone and chopped it into a bite sized dice.
Ingredients:
2 chicken breasts- 2 plum tomatoes diced- 1 small onion diced- shredded lettuce-
burrito sized flour tortillas- Provolone and an Italian shredded blend cheeses-
Sweet Baby Rays BBQ sauce- and some non stick spray.
Heat a skillet over med heat and spray with some non stick spray
(I have used butter it works great I was just trying to save a few calories).
Add a tortilla and sprinkle with your favorite cheese ( I made one quesadilla with an
Italian cheese blend and another with Provolone slices. Both were good but the
Provolone was best). Sprinkle with some chopped onion.
Add enough chicken to evenly cover the tortilla. Squeeze some BBQ sauce all
over the chicken. I didn’t measure but approximately 3-4 Tablespoons of
sauce. Definitely just add all ingredients to your taste.
Add some tomatoes and more cheese. Top with another tortilla and cook
4-5 minutes per side or until tortilla is crispy and cheese is melted.

*Since it can be tricky to flip without a lot of fall out you can just use one
tortilla. Just make like above but go lighter on the filling and flip one side of the tortilla
over so the edges meet.*

I cut it using a pizza cutter. Just like that…You have a crispy, cheesy, BBQ
Quesadilla! I like to top mine with shredded lettuce. YUM! This recipe made 2 large
quesadillas and 2 half quesadillas.
Recipe
*Yields 2 large and 2 half quesadillas
2 chicken breasts
2 plum tomatoes diced
1 small onion diced
shredded lettuce
burrito sized flour tortillas (I used a total of 6)
Shredded Italian cheese blend (or your favorite)
Provolone (or your favorite)
BBQ sauce (I used Sweet Baby Rays BBQ Sauce)
Non stick cooking spray
Heat skillet over Medium heat and spray with non stick spray. Lay tortilla in pan and add cheese. Evenly top tortilla with chicken and add BBQ sauce. Sprinkle with tomatoes and top with more cheese. Lay another tortilla on top of the ingredients and cook 4-5 minutes per side or until tortilla is crispy and cheese is melted. Cut with pizza cutter and serve with your favorite toppings.
This was a big hit with my family! Definitely going on the please make again list! Just like with most of my recipes you can personalize it to your tastes. This would be delicious with some grilled green peppers and mushrooms!
If you are cooking more then 2 quesadillas I would put a foiled lined baking pan in a warm oven to keep the finished quesadillas warm until you are ready to serve. Also, you can cook 2-3 quesadillas at a time on a large griddle.

New Mama Chicken Casserole

I love, love, love bringing a meal to a new mama. It is such a nice stress reducer for a new family to not have to worry about dinner or having to spend a lot of money eating out the first few days and I’ll admit I kinda like getting my newborn fix! Blessing someone with a homemade meal can be quick, easy and budget friendly! I love this recipe because it can easily be put together and even easier for the recipient to throw it in an oven and serve. This is also a recipe my family loves and it is so easy to personalize it and make it your own!  Keep reading for the printable recipe.

The stars of the show.
mix together the soups, the milk and 1 Cup of cheese. Set aside.
Shred or cut chicken into bite sized pieces.
Add your drained egg noodles to a large bowl.
To the noodles add 1/2 the sauce mixture, the chicken, 1/2 C of cheese, and the peas. Mix well. Add more of the sauce mixture until you get a nice creamy moist consistency. I used all but about 1/8 of a cup of the mixture.
Add to your disposable baking dish and top with the last of the cheese.I brought this dish to the family unbaked so they could eat when they were ready. .
Have fun with this recipe! You can add potato chips on top to make a crunchy crust.  Try using mixed medley of vegetables or use leftover turkey instead of chicken.  I hope you enjoy this simple but yummy recipe. Thanks for stopping by!

Meatloaf Muffins

What did you have for dinner tonight? I made for my family my meatloaf muffins. They take about 15 minutes to put together and you can customize them depending on the tastes of each family member (no whining when everyone can make their own). Use your favorite meatloaf recipe or you can give mine a whirl.

My basic meatloaf recipe is easy peasy-I start with 1 1/4 pound lean ground beef
and 1 small onion grated (using a box grater).
I add in about 14-18 crushed saltines (yes, saltines), 1 egg beaten, a few
splashes of milk, salt, pepper, and a little onion powder.
Mix Well.
This made exactly 12 muffins. From left to right-Row 1 topped with BBQ sauce
 and sliced onion. Row 2 made a well and put American cheese slices. I sealed the beef
 over the top and topped with ketchup and onion. Row 3 topped with ketchup and
 onion. Row 4 made a well and put in Colby-Jack cheese sealed it up and topped
 with BBQ sauce. Use your imagination! Bake at 350 for about 20 minutes and
 voila! Dinner is done! The meatloaf cooks through without drying out.
Here is what you get (American cheese stuffed topped with ketchup).
We serve ours with some mashed potatoes and salad.
