Huge Aldi Grocery Haul 5-25-2016

Two to three times a year I like to “shop” my pantry, freezer, and fridge.  I like to use up what we have.  I find that I waste a lot less food doing this.  I love that it gets me to be more creative in the kitchen and it makes it easier to clean the fridge and pantry J I’m all about that…BTW, I just read an article that said homemakers in the 50’s did over 50 hours of housework a week…..phew…..I am so grateful for modern conveniences!

I love watching and seeing what others are shopping for so I thought I would once again share my Aldi grocery haul.

I share that I like to use coconut oil as a moisturizer but am pretty clueless on how to cook with it!  I would love to see how you use it. Please leave a link or recipe in the comments…I would LOVE to check it out!

Simple Salisbury Steak

One of the greatest successes’ of motherhood has to be the moment when you serve a meal your whole family loves.  It’s a moment when the clouds part, the Hallelujah Chorus is cued, and for the next 30 minutes all is right with the world. You live for those blissful moments, am I right!?!

Anyway, that is what this recipe does for our family and I am pretty confident it could give a moment to you too!

The stars of the show. Ok, don’t let the gravy mixes get you nervous…sometimes mama needs a shortcut.

Everything but the gravy gets thrown into bowl. Get your hands in there and give it a quick mix.

I usually shape them into 4-5 patties. They will be thick but that just adds to the yumminess. I promise, they will NEVER know about the hidden mushrooms 🙂

After browning the beef on both sides you will momentarily remove the patties from the pan so you can get the gravy started….Kinda makes it sound like a party!

Once the gravy comes together, it is time to add the patties back in. This is where good things happen!

 

Here you have it!  We like to serve this with either mashed potatoes or rice.

Nutella Banana Muffins

There are three things in life I adore…Jesus, my family, and Nutella…….clearly I am a girl who has her priorities in order 😉

One of my most requested recipes is this one. Somehow, something magical happens when you bring Nutella and Bananas together……the clouds part, the sun shines, and for a brief moment siblings get along.

So if you know what is good for you, you’ll keep reading for the recipe.

Take a minute to mash your bananas well.

Sift your dry ingredients together.

Add the sugar, oil, vanilla, and egg to the bananas.

Don’t be shy with the Nutella!

Bake until they are golden on the outside……..

…and moist and decadent on the inside. Trust me they are worth the calories!

Nutella Bomb Banana Muffins

Prep Time: 10 minutes

Cook Time: 14-17 minutes

Ingredients (12 muffins)

  • 1 1/2 C. flour
  • 1 tsp. baking powder
  • 1tsp. baking soda
  • 1/2 tsp. salt
  • 2 ripe bananas, mashed
  • 3/4 C. sugar
  • 1/3 C. oil
  • 1 egg, beaten
  • 1 1/2 tsp. vanilla
  • 1/2-1 TBSP Nutella per muffin

Instructions

Pre heat oven to 375. Line muffin tin with cupcake liners.

Sift together flour, baking powder, baking soda, and salt and set aside.

In a separate bowl add bananas and mash well. Stir in sugar, egg, oil, and vanilla and mix well.

Add the dry ingredients to the banana mixture and mix until just combined.

Fill muffin cups 3/4 full and top each unbaked muffin with 1/2-1 TBSP of Nutella and with a knife or toothpick and lightly swirl the Nutella and batter together.

Bake 14-17 minutes.

Sweet and Sour Chicken

I love when my sweet girls want to prepare dinner. I love not just the practical skills they are learning in the kitchen but also that they are building a sweet friendship. If you are looking for a yummy and easy dish…keep on reading for the printable recipe.

Get a baggie and add the corn starch and chicken.

Get your ‘shakin’ face on! Imperative for the best results.

Whisk up a couple of eggs.

Voila! The sauce cooked onto the chicken beautifully. Here is my plate-steamed white rice (with a little extra sauce) topped with the glorious sticky chicken. Quick Enchilada Bake

Who doesn’t love a meal that consists of 5 ingredients and one pan?  This girl does!  This meal is perfect for those days when you just want a quick meal with low fuss and minimal mess.  Sit back, get comfy and see just how easy this meal can be.  Enjoy!

4 chicken breasts (about 1 1/2-2 pounds). Sprinkle both sides of chicken
with taco seasoning about a teaspoon per side. Bake in 350 degree oven
for about 35-40 minutes or until cooked through.
While chicken is cooking slice up about 4-5 green onions.
You will need 1 Cup of your favorite cheese. Really, you could use
as much or as little as you like. 1-19oz can of enchilada sauce. This yields
about 2 Cups of sauce. Again use less if you would prefer it less saucy.
We used extra sauce in ours because we served ours with tortillas and
white rice. The extra sauce absorbed into the rice and made it extra yummy!

When chicken is done remove it from the baking pan and dice it up into bite sized pieces. Add the enchilada sauce and mix well. Top with cheese and place back into your 350 degree oven for 20 25 minutes or until the cheese is melted and the mixture is hot and bubbly.

                                                                                                                        

                     When it is done baking sprinkle with the green onions.

            We served ours with white rice rolled in tortillas topped with 
               lettuce and tomatoes. Now for the verdict from some tough critics…

                  Very enthusiastic thums up from the girls. The hubba hubba hubby
    also gave it a thumbs up.

Recipe

3-4 boneless skinless chicken breasts

1-2 tsp taco seasoning

4-5 green onions thinly sliced

1 C. shredded cheese

1-19oz can enchilada sauce

Pre-heat oven to 350 degrees.  Place chicken in baking pan and sprinkle both sides with taco seasoning.  Bake 35-40 minutes or until cooked through.  Slice up green onions while chicken is cooking, set aside.  Remove chicken from oven and cut into bite sized pieces.   Return chicken to baking pan and add the enchilada sauce, mix well.  Top with cheese and return it to your 350 degree oven.  Cook an additional 20-25 minutes or until mixture is hot and bubbly and cheese is melted.  Sprinkle with green onion.

Serve as is or on top of crisp shredded lettuce (great low carb meal) or as my family did, with tortillas.  A little less fussy than traditional enchilada’s.  As always, thank you for visiting.  I love to hear from you and to see what you’re cookin’.  If you have a favorite recipe, please share below or add a link, I would love to see it!

New Mama Chicken Casserole

I love, love, love bringing a meal to a new mama. It is such a nice stress reducer for a new family to not have to worry about dinner or having to spend a lot of money eating out the first few days and I’ll admit I kinda like getting my newborn fix! Blessing someone with a homemade meal can be quick, easy and budget friendly! I love this recipe because it can easily be put together and even easier for the recipient to throw it in an oven and serve. This is also a recipe my family loves and it is so easy to personalize it and make it your own!  Keep reading for the printable recipe.

mix together the soups, the milk and 1 Cup of cheese. Set aside.
Shred or cut chicken into bite sized pieces.
Add your drained egg noodles to a large bowl.
To the noodles add 1/2 the sauce mixture, the chicken, 1/2 C of cheese, and the peas. Mix well. Add more of the sauce mixture until you get a nice creamy moist consistency. I used all but about 1/8 of a cup of the mixture.
Add to your disposable baking dish and top with the last of the cheese.I brought this dish to the family unbaked so they could eat when they were ready. .
Have fun with this recipe! You can add potato chips on top to make a crunchy crust.  Try using mixed medley of vegetables or use leftover turkey instead of chicken.  I hope you enjoy this simple but yummy recipe. Thanks for stopping by!

Homemade Corndog muffins

I have been inspired by many Pinterest recipes some with and some without success.  Here is my version quick, easy, and delicious.  Keep reading for the printable recipe.

This is all you need!
My lovely assistant is demonstrating putting the hot dog pieces into the muffin pan.
Cover each hot dog piece up with some batter and bake for 15 minutes.

                                                                                                                                                
                                                                                 Voila!   Let cool in the pan for about 5 minutes to avoid them becoming a crumbly mess .  Was it a success?  Let’s find out…..                                                 Two enthusiastic thumbs up from my boy-o-boy.  He prefers it with no cheese.  As for my Mells?…..

                                                                                                                                                  

She gives it two thumbs and two toes up! She prefers hers with cheese.
Like it spicy?  Add some chopped Jalapenos to the batter.  Want it more meaty? Go ahead and add more hot dog to each cup.  Have fun making it your own!
 
 This recipe is economical, healthier than the fried alternative especially if you use turkey dogs.  It is quick, and easy enough the kids can help!  Makes a great on the go meal.   Thanks for visiting!
