Huge Aldi Grocery Haul 5-25-2016

1 Jun

Two to three times a year I like to “shop” my pantry, freezer, and fridge.  I like to use up what we have.  I find that I waste a lot less food doing this.  I love that it gets me to be more creative in the kitchen and it makes it easier to clean the fridge and pantry J I’m all about that…BTW, I just read an article that said homemakers in the 50’s did over 50 hours of housework a week…..phew…..I am so grateful for modern conveniences!

I love watching and seeing what others are shopping for so I thought I would once again share my Aldi grocery haul.

I share that I like to use coconut oil as a moisturizer but am pretty clueless on how to cook with it!  I would love to see how you use it. Please leave a link or recipe in the comments…I would LOVE to check it out!

Lest we Forget

28 May

I am so grateful for the brave men and women who headed the call and left what was familiar and comfortable for a life of upheaval and uncertainty. Today I pause with reflective prayer to honor those who gave their all…the fallen brave who courageously breathed their last breath defending the country and the people they so loved.

To the families who gather around a grave rather than a grill-my prayer is that our Heavenly Father will fill them with grace, peace, and healing. That they would find comfort in each other and that the sweet memories of their loved ones will sustain them until they are reunited in Heaven. Thank you, for your great sacrifice also!

 

As you enjoy your 3 day weekend please remember and pray for all the brave men and women in our military. Pray for the mothers and fathers who will never hold their precious boys and girls in their arms again, for the wives and husbands who will never get to live out the hopes and dreams they planned together, and for the precious children who will never feel the tickle of daddy’s whiskers on their cheek or the soft embrace of their mother’s arms again. The burden is too great to let this weekend go by without a heartfelt sense of gratitude for the meaning behind our three day weekend.

Homemade Croutons

This is a public service announcement.

It seems for years we have been doing our salad injustice!  We take our beautiful fresh garden greens and top it with stale, artificial tasting, bagged croutons. Why?  Because we didn’t realize making our own was so easy!

I have always been a sorta like croutons kind of girl but once I started making my own, they have pretty much become more than just a salad topping.  My family will eat these for a snack, my daughter’s boyfriend asks to take some home whenever he comes for dinner, and friends and family are always wanting the recipe.

Because I consider you all friends…I want to share the recipe with you too!

Get your butter, oil and spices in a 9×13 baking dish and place that in your pre-heated oven.

Cube your baguette into bite size pieces.

Creamy Southwest Chicken Soup

I just love those mindless, economical, quick throw together dinners.  We had a (healthy…I sometimes get called out for the unhealthy recipes….balance, my friends, balance.) baked whole chicken for dinner last night and I used the carcass to whip up a yummy homemade broth for tonight’s dinner. You can definitely use store bought broth and it is just as good.  So if you are interested in not spending a large portion of your evening preparing dinner tonight keep reading for the printable recipe.

Dump all the ingredients in to the crock pot, give it a quick stir, and forget-about-it!

Soup, glorious, soup! This cooked low and slow in my slow cooker for about 7 hours. Add a little garnish and VOILA! Simple, hearty, family favorite!

Nutella Banana Muffins

There are three things in life I adore…Jesus, my family, and Nutella…….clearly I am a girl who has her priorities in order 😉

One of my most requested recipes is this one. Somehow, something magical happens when you bring Nutella and Bananas together……the clouds part, the sun shines, and for a brief moment siblings get along.

So if you know what is good for you, you’ll keep reading for the recipe.

Take a minute to mash your bananas well.

Sift your dry ingredients together.

Add the sugar, oil, vanilla, and egg to the bananas.

Don’t be shy with the Nutella!

Bake until they are golden on the outside……..

…and moist and decadent on the inside. Trust me they are worth the calories!

Nutella Bomb Banana Muffins

Prep Time: 10 minutes

Cook Time: 14-17 minutes

Ingredients (12 muffins)

  • 1 1/2 C. flour
  • 1 tsp. baking powder
  • 1tsp. baking soda
  • 1/2 tsp. salt
  • 2 ripe bananas, mashed
  • 3/4 C. sugar
  • 1/3 C. oil
  • 1 egg, beaten
  • 1 1/2 tsp. vanilla
  • 1/2-1 TBSP Nutella per muffin

Instructions

Pre heat oven to 375. Line muffin tin with cupcake liners.

Sift together flour, baking powder, baking soda, and salt and set aside.

In a separate bowl add bananas and mash well. Stir in sugar, egg, oil, and vanilla and mix well.

Add the dry ingredients to the banana mixture and mix until just combined.

Fill muffin cups 3/4 full and top each unbaked muffin with 1/2-1 TBSP of Nutella and with a knife or toothpick and lightly swirl the Nutella and batter together.

Bake 14-17 minutes.

New Mama Chicken Casserole

I love, love, love bringing a meal to a new mama. It is such a nice stress reducer for a new family to not have to worry about dinner or having to spend a lot of money eating out the first few days and I’ll admit I kinda like getting my newborn fix! Blessing someone with a homemade meal can be quick, easy and budget friendly! I love this recipe because it can easily be put together and even easier for the recipient to throw it in an oven and serve. This is also a recipe my family loves and it is so easy to personalize it and make it your own!  Keep reading for the printable recipe.

mix together the soups, the milk and 1 Cup of cheese. Set aside.
Shred or cut chicken into bite sized pieces.
Add your drained egg noodles to a large bowl.
To the noodles add 1/2 the sauce mixture, the chicken, 1/2 C of cheese, and the peas. Mix well. Add more of the sauce mixture until you get a nice creamy moist consistency. I used all but about 1/8 of a cup of the mixture.
Add to your disposable baking dish and top with the last of the cheese.I brought this dish to the family unbaked so they could eat when they were ready. .
Have fun with this recipe! You can add potato chips on top to make a crunchy crust.  Try using mixed medley of vegetables or use leftover turkey instead of chicken.  I hope you enjoy this simple but yummy recipe. Thanks for stopping by!

Cheesesteak Stuffed Peppers

I know in a bid to make healthier food choices many people are jumping on the low carb wagon. I saw a similar recipe online and tweaked it to suit my families taste.  Keep reading to see their reaction and to get a printable recipe.

What you’ll need.
In a large skillet heat butter and oil.
Caramelize the veggies

Remove pepper shells from oven and pour out excess water in each shell.

 
Place a slice of Provolone cheese at the bottom of each pepper.
(One left cheese less for my son who sometimes doesn’t like cheese)
Fill each pepper with filling.

Top each with another slice of Provolone.

 Place in 400 degree oven for 15 minutes and voila! Cheesesteak
                    stuffed peppers. And the verdict is………………..

Thumbs up for the cheese less wonder.

And an ‘eh’ from the Broukie Bear. Hubby really liked it but he missed
the bread.  I really enjoyed it and I will be making this again!
*Prebaking the green peppers allows them the chance to become a little more tender but it also allows some of the moisture to cook out. This prevents it from being mushy and soggy.
*Salt draws moisture out of the onions and mushrooms and waiting to salt the veggies at the end of cooking allows the veggies to caramelize quicker.
